  • Sweet fragrance, aroma of grape jam, notes of green apple, berries, vanilla and baker’s chocolate. Aftertaste of coconut and dark chocolate with a medium lemon acidity and a juicy mouthfeel.
  • This honey processed coffee has a wide range of flavors but what we love most about it is the body and sweetness. We recommend roasting anywhere from a dark-light roast to a light-dark roast (50 to 80 Agtron) depending on your preference. Lighter roasts will show more fruit character with a mellow acidity while darker roasts will show more chocolates and a heavy body. Great for espresso, blending or serving straight up as a filter coffee.

The attention to detail from Camilo and his team is impeccable (just see processing description below). Each process is tailored to meet a very specific flavor profile with each step being tightly controlled for consistent and repeatable results year after year. We have created a partnership with Camilo and the Santuario Project to offer exclusive coffees here in the United States!

Good bean

Although I have decided to not put this into my roast offering at this time (a very difficult decision!), it's a great bean. Roasted light, I noted a pleasant fruity aroma and a sweet honey flavor with a full aftertaste - not as smooth as I would have liked but probably a result of the roast vs bean. Attempted a darker roast and I can see this being a great offering as a medium/medium-dark roast.

Thank you for sharing your experience! We also get that nice honied-sweetness and a really nice chocolate note to it.

Sweet Fragrance!

Amazing fragrance. Nice aroma. Great espresso! Coffee was good. I still feel like I could get more out of this bean so I ordered more of it. Really looking forward to roasting it some more.
