Peach, cherry, lemon acidity, floral, syrupy body and well balanced.
Like most Ethiopian coffees, we prefer to keep this coffee light to medium to highlight all of the fruit characters in the coffee. This particular natural from Ye Genet station shows a really nice lime acidity that is definitely noticed in the light roasts. At medium roasts, the coffee becomes more cherry-syrup focused. Brews up great in any brewer!
The delivered coffee is sun dried in the cherry on raised beds for 28-40 days, depending on weather. During this time, the cherries are manually turned every couple of hours to encourage even drying as well as to stop mold and over fermentation.
