  • Tropical fruits, green apple, caramel sweetness, pineapple acidity, juicy body.
  • This a pretty wild coffee! Use a gentle heat profile and keep the roast light to medium to highlight all of the tropical fruit notes. Coffees like this tend to take off after 1st crack so watch energy settings as you approach the end of the roast.

About the coffee:

Finca El Rosal is a family farm with 3 generations of Antioqueños who have dedicated their lives to producing coffee. Due to violence in the area, Don Pedro (grandfather), had to abandon the farm for several years, leaving the administrator to run the farm the best he could. Once the violence subsided, Don Pedro and his son Raul returned to the farm to rebuild and replant the badly abandoned lots. Today, Finca El Rosal is being worked organically, although no certification. The family has returned to planting trees that generate shade like guama, avocado and citrus fruits are being planted.

Don Raul and his son Felipe are dedicated to the craft and working on different processes to help increase the return on their coffee. The resulting red honey from November’s harvest is absolutely delicious!
