About the coffee:
The coffee is grown under shade by more than 950 smallholder farmers from the Gorgora Kebele in the Dimtu Woreda. Freshly picked cherries are received at the Ye Genet washing station. The delivered coffee is sun dried in the cherry on raised beds for 28-40 days, depending on weather. During this time, the cherries are manually turned every couple of hours to encourage even drying as well as to stop mold and over fermentation. Average rainfall in the area is approximately 2000-2500mm annually with average temperatures ranging 20-23*C.

Found that this coffee roasted well in between light and medium. Most successful with longer rest time.
