Caramel sweetness, nutty aftertaste, silky mouthfeel and medium body, low acidity.
This coffee makes a great dark roast or component in espresso blends. The dense bean can handle the heat and is well-rounded to appeal to most coffee drinkers. We prefer to drink this coffee at a roast ending right in the middle between first and second crack. The coffee is uniform and very easy to get a consistent roast.
About the coffee:
The organization name of Kapel Bat s'illum Xitalha means “Coffee from the sierras ofXitalha” in the nativeTzeltalan language. Xitalha is the Tzeltal name of the municipality ofSitalá in Chiapas. Established in 2009, the group organizes the efforts of local indigenous Tzeltal coffee growers from different communities around Sitalá who are looking to market their coffee, and other artisanal products, at fair prices. Each producer cultivates an average of >1.5 hectares of land and has their own processing equipment on their property. Coffees are pulped and washed before being sun dried. The organization standardizes the washing and drying methods to achieve consistent quality from all members of the Kapel Bat s'illum Xitalha group. This coffee is grown organically and holds organic certification at origin.
