  • Fragrance of dark chocolate and cherry, aroma of guava and raspberry, notes of cherry and strawberry with a lemon zest aftertaste and tart grapefruit-like acidity with a syrupy body.
  • The fruit notes show best at lighter roasts with a tart acidity, however the syrupy body and sweetness will be more pronounced at a medium roast. We recommend keeping this coffee somewhere in between a light-medium and medium-dark roast to showcase these attributes.

Mild grapefruit and floral coffee

I roasted the coffee both as a light roast and medium dark and found it to do well at both spectrums with mild notes of grapefruit and florals. I overlooked the harvest date at the time of purchase but was surprised to see it was 2022. Perhaps its age is why I did not pull out other flavors listed on the flavor notes.

Hey Larry, thanks for sharing your feedback. That coffee is definitely starting to taste a bit tired compared to when it was really fresh. We only have a few pounds left and then it is gone for good.
If you are looking for interesting natural processed coffees, I would recomend checking out the bourbon variety from Finca Colomba in El Salvador.

Strawberry/Cherry

I loved this Guatemala on espresso. I roasted this bean a bit too dark, wishing end temp was lower. The coffee was still great but you could tell it wanted to be lighter. But for espresso, wow! Burst of Cherry/Strawberry yummyness.
