  • Chocolate brownie and pear in fragrance and aroma, very chocolate-forward profile with notes of milk chocolate, fudge and panela. Mild fruity aftertaste with notes of dragon fruit, pear and some florals. Mild citrus acidity with a heavy body and chewy mouthfeel.
  • This coffee from Finca Nuevo México boasts big chocolate notes with a really heavy body. We recommend roasting somewhere between light-medium and medium (about 70-85 Agtron). Excellent for espresso and for holding a great base in blends.


Their extreme control of the fermentation and drying process is obvious in the resulting clean cups with amazing sweetness and body. This semi washed coffee is first floated in water to rinse surface dirt and separate floaters before being added to 9000 liter tanks. The cherries are held for 88 hours in an oxygen deprived environment and then pulped and sent through an Ecowasher (demucilager) to mechanically remove most of the mucilage from the parchment. The semi-washed parchment is then put through a Centriflux machine to remove most of the water on the outside of the parchment. This coffee is then set to dry on traditional patios where it is constantly turned to promote even drying for 6 to 8 days pending weather conditions.

Very high quality

Wonderful chocolatey coffee that roasts extremely evenly with little chaff or unevenness. Probably better than any green beans Ive ever purchased for uniform roast using a home Cafe Gene roaster. Have recommended to others and will reorder.

The team at Finca Nuevo Mexico have done a great job standardizing their process which I believe really shows in the evenness that you are referring to. That chocolate reminds us of chocolate fudge when the coffee gets pushed into the medium-roast range.

Easy Roast, Delicious Cup

Such a straightforward coffee to roast. Looks great coming out of the roaster, super even coloring. The greens look really even, similar, clean.

Nicely flexible coffee. Medium roast gives you a stupidly good chocolatey daily driver with a nice touch of sweetness on top. Could drink this every day for months. If you or your loved ones like your coffee piping hot, this coffee really preserves its taste profile even at really hot beverage temps. I generally don't drink my coffee super hot but I don't mind this one straight off the brew. Take the coffee just a touch darker (not even second crack) and it's a fantastic chocolate espresso. Spot on for milk drinks.

Roasting this on a Bullet I'm completely comfortable roasting this coffee on autopilot. Small deviations due to ambient temp and humidity differences don't seem to bother this coffee. It roasts extremely consistent.
