  • Floral aroma of chamomile with notes of cherry, milk chocolate, orange, peach, plum and strawberry. Coffee has a juicy citrus acidity. Coffee has a smooth velvety body and mouthfeel.
  • Swiss Water processed decaffeinated coffees will lose their moisture more easily at the beginning of a roast. Use a gentle approach at the early stages of the roast to retain moisture needed for chemical reactions later in the roasting process. Longer development times will bring forward more sweetness in the coffee, while a short development time will accentuate the coffee’s complex fruit character and soft florality. This coffee is the result of a collaboration between Swiss Water and Momos Coffee, based in South Korea. Momos carries the slogan "specialty for all," a commitment that has helped shape specialty coffee culture across the country. The team is home to 2019 World Barista Champion Jeon Jooyeon, one of the most accomplished baristas working today and a trailblazer for women in the industry. Under Jeon's guidance, Momos has earned recognition in Korean cafe and roasting circles for their work behind the bar and their depth in sourcing.

Processing takes place at the Guduba mill, which Eyasu Worasa has operated for more than a decade. This lot is a natural process, with notes of berry and stone fruit, distinctly Ethiopian florality, and a tea-like finish.
