Coffee 201: Advanced Coffee Education - January 8th and 9th (Anaheim, California)

This is a two-day education series developed to build the knowledge and skills that coffee roasters and green buyers need to purchase green coffee, manage quality, and build a robust coffee program.

The advanced coffee education program will be broken down into two days of hands-on learning and tasting, lecture and discussion. Each day will include three individual classes (six classes total):

Day 1:

• Advanced Coffee Cupping
  • Using cupping forms.
  • Cupping exercise to grade coffees.
  • Calibration and discussion after cupping.
• Coffee Chemistry
  • Lecture and discussion on coffee chemistry.
  • Tasting organic acids in coffee.
• Green Contracts
  • Presentation and recommended tools.
    

Day 2:

• Advanced Coffee Processing 
  • Presentation and discussion about processing methods.
  • Cupping exercise tasting various processing methods.
• Green Planning
  • Presentation and discussion reinforcing menu development and green coffee sourcing to meet your coffee program's goals. 
• Roast Approach: Developing Roast Strategy
  • Presentation and discussion about roast profiles to modulate flavor profile
  • Tasting exercise to highlight variation in roast approach.

These classes are designed for individuals who have a foundational knowledge of coffee cupping and basic roasting principles.  No green coffee buying knowledge or experience is necessary but we strongly recommend participants take our comprehensive Coffee 101 class before taking this advanced Coffee 201 class.

Classes will be taught by Jared Hales and Emily Smith. Jared and Emily have nearly three decades of combined experience in coffee quality, green buying and roasting. They have worked with roasters of all sizes, from small roaster start ups to large roasters sourcing millions of pounds.

Each full day of classes will begin at 9am sharp and run through 4pm, with a lunch break provided. Class sizes are limited in order to provide the best experience to participant.

What to bring?
Just bring yourself and a notepad to take any notes. Water will be provided but bringing a reusable water bottle is encouraged.

How much?
$750 which includes the following: 

• Two full days of advanced coffee instruction
