  • Aroma and fragrance of black cherry. Flavor notes of black cherry, blackberry and dark chocolate. Aftertaste of chamomile, honey and raspberry. Bright citric acidity with a heavy body and syrupy mouthfeel.
  • This is a classic expression of the natural process profile from Yirgacheffe with a lot of berry and cherry notes. We find ourselves enjoying this specific coffee in the light-medium to medium roast range (about 95 to 85 Agtron) to bring out most of the fruity notes as well as the complimentary dark chocolate character. At medium roasts (about 75 to 85 Agtron) the sweetness and dark chocolate notes tend to shine through with a fruity, bittersweet profile.


In this natural process, coffees are soaked in water for 12 hours to remove floaters and rehydrate the seeds before processing. After the floaters are removed, cherries are dried on raised beds with a thickness of 5cm. The raised beds at the Adorsi station are position to receive high airflow and lower sunlight to provide a more even, slower drying process overall taking about 28 days to dry completely.
