- Fragrance and aroma of chocolate, lychee and plum. Unique notes of black currant, grape and milk chocolate with an aftertaste of cocoa powder, prune and white chocolate. Medium malic and lactic acidity with a medium body and smooth, tea-like mouthfeel.
- Roasting this coffee to lighter degrees will bring out the black currant and malic grape qualities. As the coffee roasts with more development, the notes of chocolate and cocoa will become even more prominent in the cup.
Anaerobic washed process with mossto
Coffee cherries are sterilized with an ozone bath and then added to a bio fermenter where they are inoculated with a mossto culture and fermented in the anaerobic environment for 48 hours. The fruits are then depulped and fermented aerobically for another 20 hours before being fully washed and dried on raised beds for 16 days.
A Family Legacy Since 1927
The story of Ratnagiri Estate begins with the late Mr. Patre K. Shivappaiya, who acquired the land in 1927 and began planting coffee shortly after. By 1934, the first harvest was underway.
Farming in Balance with Nature
Ratnagiri sits in the Western Ghats, a protected biodiversity hotspot and home to a nearby tiger reserve. The farm is intentionally managed to support the ecosystem around it—with wildlife corridors, dense shade, and low-intervention practices that promote environmental health and resilience.
Built by a Strong Team
Ashok leads with vision, but Ratnagiri’s consistency is the result of deep collaboration.
Divya Patre oversees cherry selection and harvest training. Her close involvement with picking teams ensures only ripe, uniform cherries are collected—laying the foundation for the estate’s clean and expressive profiles.
Mr. Venkatesh Rao, with over 30 years at the estate, manages day-to-day operations and administration. From machinery to labor coordination, his reliability helps everything run smoothly behind the scenes.
Mr. Mahesh, also a 30-year steward of the land, supervises farm activities and supports the field team. His knowledge of the terrain and rhythm of the seasons helps guide the estate’s work throughout the year.
Together, this team brings structure, care, and continuity to Ratnagiri’s approach—qualities that come through in every lot.
Looking forward
Since India’s export liberalization in 1994, Ratnagiri has shared its coffee with roasters across the U.S., Europe, Japan, Australia, and the Middle East. Today, nearly all of the estate’s production is focused on high-end specialty coffee—built on a foundation of scientific precision and steady experimentation.
Ashok and his team continue to push boundaries—not only to produce excellent coffee, but to help define what’s possible for Indian specialty coffee at large.
