Café Uba's full operation includes four farms, a dry mill, a processing station, a roasting center, a cupping lab and a barista training lab.
Wush Wush is a delicate variety, and the team manages it at Finca Capri through selective pruning rather than stumping, which keeps the trees healthier and better suited to the plant's natural growth. From there, this lot follows the traditional washed process: the cherries are depulped, fermented for 18 hours, then washed clean. The coffee dries on raised beds for 25 days and finishes with five days of mechanical drying, a combination that lets the variety's citrus, floral, and caramel character come through clearly in the cup.
