  • Tropical fruit and raspberry in fragrance and aroma. Up front notes of blackberry and molasses, aftertaste of red currant, plum, honey. Bright malic and tartaric acidity. Syrupy mouthfeel and heavy body.
  • This coffee offers juicy tropical fruit flavors with a bright acidity. Roasting at the darker end of a light roast (about 90 Agtron) will complement these fruit notes without muting the acidity too much. Roasting medium (about 80 to 90 Agtron) will result in more cooked-fruit notes with a muted acidity and very heavy body.


Finca Las Dos Sofias is located in the Alotepec-Metapan mountain range and surrounded by El Trifinio National Park, where Guatemala, Honduras and El Salvador share borders. The farm implements practices such as pruning, weed control, and fertilization based on soil analysis, and gives employment to some 200 workers during harvest and from 30 to 50 permanent jobs are demanded the rest of the year. Finca Las Dos Sofias uses their own nursery to replant old or damaged trees.

Amazing

Mario Valiente does it again. Everything from his farm impresses. This might be his best. I roasted light but closer to a medium than a true light. Fruity notes were very present.

One of my all time favorites. Fruity flavors really come out on a lighter roast. Hope to be able to get more.
