  • Fragrance and aroma of boysenberry, orange blossom and cocoa. Notes of berries, fruity pebbles with a floral aftertaste. Medium orange-like acidity with a medium, milky body and a sugary, fruit-like sweetness.
  • For roasting this Ethiopian natural processed coffee, we recommend a lighter roast to preserve the fresh berry character of the cup and the floral aromatics. A softer charge temperature will allow heat to evenly penetrate the dense bean, higher heat application through Maillard reaction will develop the complex acidity that brings the bright berry flavor forward. Stretching out the period of time spent in the caramelization phase (20-30 degrees prior to first crack) will transform vibrant fresh berry flavors into rich sweet flavors of jam while enhancing the body. Finishing the roast, we recommend a short period of time in post crack development to preserve sweetness and acidity. For more dark chocolate notes, extend the time spent in post crack development.

More than 8,500 smallholder farmers in Kochere grow this coffee organically on family plots passed down through generations. They intercrop it with avocado, enset, and soya beans, supporting food security and diverse livelihoods.

Boledu honors tradition and experiments too, working with anaerobic and cold-washed methods alongside classic naturals and washed coffees. Their work has earned international recognition, including Cup of Excellence awards.
